Scandinavian Thumbprint Cookies
gluten-free, egg-free
Add to bowl:
1/4 cup ghee or coconut oil, liquified
3 tbsp honey or agave
1/4 cup applesauce
1 tbsp Chia Seed meal (I grind my seeds in coffee grinder or Magic Bullet. 1 tbsp meal is equal to about 1/2 tbsp seeds) ( use twice as much flax seed meal as chia seed meal)
1/2 tsp vanilla
Beat with electric mixer.
Add:
1/3 cup tapioca flour
1/3 cup almond meal flour (I use Bob's Red Mill)
1/3 cup coconut flour, sifted
Beat with electric mixer.
Roll into little balls and place on unbleached parchment paper.

HOMEMADE CAROB CHIPS (gluten free, vegan)

HOMEMADE CAROB CHIPS (gluten free, vegan)
yield: about 2 c of chips
1 1/4 c coconut oil, melted
1 c carob flour
2 T agave nectar
1 tsp vanilla extract/flavoring (gluten free)
1. Whisk all ingredients together until well mixed and smooth.
2. Line a small pan with parchment, plastic wrap, or wax paper, and pour in oil mixture.
3. Place in refrigerator to cool.
4. Once solid, chop into chips of desired size, and store in jar in a cool place until ready to use.
