pie crust

here is a recipe for pie crust that i've used to make exactly what you're looking for.

1/2 cup of sifted coconut flour
1/2 cup of almond flour
2 eggs
1.5 teaspoons of honey (or in your case Truvia)
1/2 tsp of almond flavoring
1/4 cup butter, melted
1/4 tsp salt
2-3 tbsp of crushed nuts (macadamia are my favorite)

beat eggs, add almond flavoring, melted butter, salt.
add flours, whisk until lump free. you may need to use a mixing spatula as it will become thick quick.

roll out to desired thickness. i roll out on/between two sheets of waxed paper and transfer to parchment paper and then put parchment paper on cookie sheet. it will break up easily, so the parchment paper serves double duty.

i spread a little Plugra butter on the pastry and then top with crushed macadamia nuts (optional, of course) and Penzey's Cake Spice. if you want to make wafers out of it, you might try scoring with a knife or pizza cutter (but don't cut all the way through).

Bake 10-12 minutes in a 400 degree oven. Edges will cook faster, so keep an eye on it. I usually put a strip of aluminum foil around the edges after about 7 minutes.
