Cherry Chocolate Chip Cookies

Cherry Chocolate Chip Cookies

1 Cup Blanched Almond Flour ( Such as Honeyville- Bob’s may not work!)
1/4 Cup Coconut Flour
1/2 Tsp. Xanthan or Guar Gum
3 1/2 TBS Softened Earth Balance Butter (or regular butter)
1/2 Cup Granulated Sugar (Any Regular or Un-refined granulated Sugar will work here)
1/4 Tsp. Almond Extract
Pinch of Salt
1/4- 1/2 Cup Chocolate Chips (Enjoy Life Chocolate Chips are the best!)
1/4 Cup Chopped Cherries


  1. Preheat oven to 325 Degrees.
  2. In a bowl of a stand mixer (or using a hand mixer) Cream the butter and Sugar. Add the Almond Extract.
  3. While the beaters continue to mix add in the Almond Flour, Coconut Flour, Xanthan Gum and Tiny pinch of Salt.
  4. Turn Beaters off- stir in Chocolate Chips and Chopped Cherries. (the dough will be very thick- so put some muscle into it! :)
  5. Roll cookie dough into 8-10 balls- press down with a fork. (The dough may feel just a little oily/crumbly)
  6. Bake 14-15 minutes. Allow cookies to cool before removing from cookie tray and eating (they will firm up as they cool!)

Breton Galette Recipe

The Players

For the crepe:

  • 1 cup of buckwheat groats (see resources)
  • 1 cup of unsweetened yogurt (see resources)
  • 1 egg from pastured hens
  • 1/4 tsp baking soda
  • 1 tsp vanilla
  • cinnamon and salt to taste
  • water to thin the batter
  • fat of choice — I prefer coconut oil, ghee, or butter. (see resources)

For the toppings:
(for each crepe prepared, use the following)

  • 1 egg from pastured hens
  • 1 to 2 oz. of grated swiss cheese
  • 2 slices of real ham from foraged hogs
  • 2-3 thin slices of apple
1. First begin by souring your buckwheat. In a blender, combine buckwheat groats and yogurt and blend well. Soak at room temperature for 8-24 hours, depending on how sour you like your sourdough.

Chocolate Coconut Ice Cream Recipe

Ingredients:

1 14oz can coconut milk *Coconut milk can often be found in the Asian section of your local grocery store. UPDATE: I made this with an organic coconut milk which WAS NOT labeled “light” but in fact it was. It was not as creamy as when I use Chaokoh brand. So if your ice cream is silky creamy, it may be the coconut milk you are using.

1/3 cup sugar or 1/3 cup agave syrup

2 tablespoons cocoa powder

pie crust

here is a recipe for pie crust that i've used to make exactly what you're looking for.

1/2 cup of sifted coconut flour
1/2 cup of almond flour
2 eggs
1.5 teaspoons of honey (or in your case Truvia)
1/2 tsp of almond flavoring
1/4 cup butter, melted
1/4 tsp salt
2-3 tbsp of crushed nuts (macadamia are my favorite)

beat eggs, add almond flavoring, melted butter, salt.
add flours, whisk until lump free. you may need to use a mixing spatula as it will become thick quick.

roll out to desired thickness. i roll out on/between two sheets of waxed paper and transfer to parchment paper and then put parchment paper on cookie sheet. it will break up easily, so the parchment paper serves double duty.

i spread a little Plugra butter on the pastry and then top with crushed macadamia nuts (optional, of course) and Penzey's Cake Spice. if you want to make wafers out of it, you might try scoring with a knife or pizza cutter (but don't cut all the way through).

Bake 10-12 minutes in a 400 degree oven. Edges will cook faster, so keep an eye on it. I usually put a strip of aluminum foil around the edges after about 7 minutes.
